DÓNDE ESTAMOS // WHERE WE ARE
El Salvador es un país situado en Centroamérica, entre Guatemala y honduras. Es el único que no tiene salida al Caribe y ha salido apenas hace 5 años de 4 décadas de infierno.
Quisimos apostar por este país prácticamente desde que empezamos a investigar en el potencial de Latinoamérica.
La idea inicial era irnos hacia Sudamérica ya que me siento súper conectada a la cultura andina, pero la inestabilidad política de la zona y la gran industria ya consolidada de hostelería nos echaba un poco para atrás.
Después descubrimos esta pequeña joyita unos miles de kilómetros más al norte y decidimos investigar más. Nos dimos cuenta que El Salvador es como un pajarito que apenas estaba saliendo del cascarón y disfrutando de los primeros rayos de sol después de mucho tiempo sumido en la oscuridad.
Y no sólo estaba empezando a disfrutar de la vida, sino que nos estaba dejando ver a los demás la belleza de su plumaje, colorido y lleno de vida, y la alegría de su cantar, con ganas de contar mil y una historias.
Ese pajarito nos llamó tanto la atención que decidimos venir y encontrar la manera de convivir en armonía y nutrirnos al máximo de su historia y su gran sabiduría. A pesar de haber llegado al mundo actual hace relativamente poco, el interior está lleno de vivencias que relatan la historia de otro mundo más gris y oscuro del que todos deberíamos aprender. Precisamente para que no se vuelva a repetir.
Todo esto acompañados por el frescor del Pacífico y sus infinitas y poderosas puestas de sol que colorearán el final de cada día dejándonos el mejor de los sabores para empezar otro nuevo día.

El Salvador is a country located in Central America, between Guatemala and Honduras. It's the only one without access to the Caribbean and has only just emerged from four decades of hell five years ago.
We've wanted to invest in this country practically since we began investigating Latin America's potential.
The initial idea was to head to South America since I feel incredibly connected to the Andean culture, but the area's political instability and the already established hospitality industry held us back a bit.
Then we discovered this little gem a few thousand kilometers further north and decided to investigate further. We realized that El Salvador is like a little bird that was just emerging from its shell and enjoying the first rays of sunlight after a long time in darkness.
And not only was it beginning to enjoy life, but it was also allowing the rest of us to see the beauty of its plumage, colorful and full of life, and the joy of its song, eager to tell a thousand and one stories.
That little bird caught our attention so much that we decided to come and find a way to live in harmony and nourish ourselves fully from its history and great wisdom. Despite having arrived in this world relatively recently, the interior is full of experiences that tell the story of another, grayer, darker world from which we should all learn. Precisely so that it doesn't happen again.
All this accompanied by the freshness of the Pacific and its endless and powerful sunsets that will color the end of each day, leaving us with the best of flavors to begin a new one.
